Little Saigon in Fairbanks
Today we drove from Denali National Park to Fairbanks with some stops along the way. After finding a nice state park campground right in Fairbanks we checked the GPS for likely ethnic restaurants to explore. There were 6 Thai options but the restaurant that caught our eye was called Little Saigon. There were no other patrons while we were there and the owner, Mai Vanvalkenburgh, cooked for us just as if we were in her home (we probably were). She went outside and brought in green leafy vegetables from her garden to add to the hot chicken noodle soup. It was wonderful, as good as the noodle soup we had in Saigon a few years ago. When we were ready to leave, Mai brought a bag with oranges, apples and tangerines to take with us. She also gave us each a hug before going out the door. An evening to remember and cherish.
